we set up a test server … most of the test data is in German - where can this be translated? (not manually, so the next user also has english data) — or is there already an English dataset?

we dont have an english set of test data yet.
Easiest way for now is to rename the products in your local database.
In general you can maintain translations of product data but currently those tanslations are used on the documents like sales order, invoice, etc.and not on the UI.
In future we plan to show the products in the language matching to your language setting.

Where is the test data stored in the git ?

The test data is part of the database seed which is shipped with the installer or docker image.
